1. Warm Spiced Cranberry Cider
recipe
1 medium navel orange, skin left on,
cut into large chunks
3 cups cider
4 cups cranberry juice cocktail
2 sticks cinnamon
2 teaspoons light brown sugar
8 cinnamon sticks for garnish
8 thin orange slices for garnish
Put orange chunks in a food processor fitted
with a metal blade or a blender, and pulse
several times until coarsely chopped, or
coarsely chop with a knife by hand.
Place chopped orange, cider, cranberry juice
cocktail, 2 cinnamon sticks and brown sugar in a
large, heavy saucepan over medium-high heat.
Cook, stirring often, until hot, 8 to 10
minutes. Using a large sieve, strain mixture and
return to saucepan. (If not using immediately,
cool, cover and refrigerate for up to 1 day.
Reheat before serving. Cider can also be frozen,
defrosted and reheated.)
To serve, pour into mugs or cups and garnish
each serving with 1 cinnamon stick and 1 orange
slice.
Serves 8.

2. Wendy's Chili recipe
1 1/2 pounds ground beef (small grind)
2 teaspoons vegetable oil
1 can onion soup
2 teaspoons chili powder
2 teaspoons ground cumin
1/2 teaspoon pepper
2 teaspoons cocoa powder
2 cans kidney beans, undrained
6 teaspoons tomato paste
15 teaspoons tomato sauce
2 teaspoons brown sugar
1 teaspoon vinegar
6 cups V8 juice
Brown beef in oil. Break meat into tiny pieces.
Place onion soup and half of cooked beef into a
blender and process on high speed. Place with
unblended beef into 2 1/2 quart saucepan. Add
remaining ingredients and simmer until flavors
are blended.

3 cups half-and-half, divided (1/4 cup and 2 3/4
cups)
2/3 cup vanilla baking chips
1 cinnamon stick
1/8 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/4 teaspoon almond extract
Ground cinnamon for garnishing
Place 1/4 cup cream, vanilla chips, cinnamon
stick and nutmeg in saucepan. Stir over low heat
until chips are melted Discard cinnamon stick.
Add remaining cream. Stir until thoroughly
heated. Remove from the heat, Add vanilla and
almond extracts.
Pour into 4 cups. Garnish with ground cinnamon.

INGREDIENTS:
2 medium shallots, minced
1 tablespoon olive oil
1 tablespoon butter or margarine
8 ounces fresh shiitake mushrooms, sliced
8 ounces fresh cremini mushrooms, sliced
8 ounces fresh button mushrooms, sliced
1 tablespoon flour
1/3 cup vermouth
2 cups beef stock
1/2 cup water
Salt and pepper to taste
1/4 teaspoon minced fresh rosemary
1/4 cup sour cream
1/4 cup chopped fresh parsley
2 tablespoons sliced almonds, toasted
TO PREPARE:
* Saute the shallots in the olive oil and butter
in a saucepan until
tender. Add the mushrooms; mix well.
* Saute until the mushrooms are tender and most
of the liquid has been
absorbed. Sprinkle with the flour.
Cook for 2 to 3 minutes or until
mixed, stirring constantly. Stir in the
vermouth. Add the beef stock,
water, salt and pepper; mix well.
* Simmer for 30 minutes. Stir in the
rosemary.
* Ladle into soup bowls. Top each serving
with sour cream, parsley and
almonds.
* Variation: Dry white wine may be
substituted for the vermouth.

5. Woodbury
Cafe Buttermilk Pie recipe

Source: This recipe was "weaseled" out
of the poor owner of the Woodbury Cafe, on the
square, in Woodbury, Tennessee around 1970.
This is similar to Chess Pie
with a little more texture and a lemon taste...I
like it better than Chess Pie.
1/2 tablespoon flour
2 tablespoons lemon extract
1/2 cup (1 stick) butter (softened)
1/2 cup buttermilk
1 cup granulated sugar
3 eggs
1 standard pie crust
Mix ingredients together and pour into pie
crust. Bake at 375 degrees F for 5 minutes. Turn
down to 350 degrees F for 30 minutes more.
