1. Pasta, Seafood and Eggs:
Calico Quiche

INGREDIENTS:
1 (9-inch) pie shell, homemade or frozen
1/4 cup red bell pepper, seeded, deveined and chopped
1/2 cup green bell pepper, seeded, deveined and chopped
1 cup Cheddar cheese, grated
1 cup Swiss cheese, grated
1 cup cooked chicken, cubed
1/4 cup butter (1/2 cube)
1/2 cup onion, coarsely chopped
1 tablespoon all-purpose flour
1/2 cup half and half
1/2 cup sour cream
4 eggs, beaten
1/4 teaspoon ground nutmeg
1 tablespoon parsley, chopped
TO PREPARE:
Preheat oven to 350 degrees.
In a pie shell, layer chopped peppers, cheeses and
chicken.
In a saute pan, melt butter and saute onions until soft.
Whisk in flour
thoroughly. Stir in half and half and simmer until
thickened, about 3 to 5
minutes. Let cool.
In a large bowl, combine sour cream, eggs, nutmeg and
parsley. Stir into
sauteed onion mixture.
Pour filling into pie crust. Bake 35 to 40 minutes
or until set.
SERVES 6 TO 8

2. Caramelized Onions
Add these sweet prepared onions to pizzas,
soups and sauce.
They also make a great steak garnish.
Makes about 2 cups
4 large Onions (yellow), peeled and thinly sliced
6 ounces Butter
Salt and pepper to taste
Melt the butter in a large skillet. Add the onions and
cook
over low heat (stirring frequently). Continue until the
onions are tender and lightly brown (about 30-35
minutes).
Use immediately or cool, cover, and refrigerate until
needed.

3. Cheese and Apple Puffs
2 eggs
1/2 tsp. salt
1 cup milk
1 cup grated cheese
1 cup flour
1 cup chopped apples
2 tsp. baking powder
Beat eggs well, add milk.
Add flour, sifted with baking powder and salt.
Add cheese and apples, mix well.
Drop by spoonfuls into hot deep oil at 375 degrees.
Fry until golden brown.
If desired, apples may be omitted and puffs served with
apple sauce.
Makes 24 small fritters.

4. Cherry Crisp
Ingredients
1/2 C. sugar
3 Tbs. all-purpose flour
5 C. fresh, pitted cherries
Topping:
1/2 C. regular rolled oats
1/2 C. packed brown sugar
1/4 C. all-purpose flour
1/4 tsp. cinnamon
1/4 C. margarine or butter
Directions
For filling, combine sugar and all-purpose flour. Toss
with cherries. Place mixture in an 8x1 1/2"-round
baking dish. For topping, in a mixing bowl combine
rolled oats, packed brown sugar, flour, and cinnamon.
Cut in margarine or butter till mixture resembles coarse
crumbs. Sprinkle over filling. Bake in a 375 degree oven
for 30-35 minutes or until fruit is tender and topping
is golden. Serve warm with ice cream if desired.
Yield: 6 servings

5. Cranberry-Apple Punch
2 quarts cranberry juice
1 and 1/2 quarts apple cider
2 tsp. whole cloves
4 cinnamon sticks
2 tsp. whole allspice
1/4 tsp. ground nutmeg
1/2 cup brown sugar
Combine all ingredients in a large pot and simmer for 1
hour or
longer if desired. Remove cinnamon sticks, whole
allspice and
whole cloves before serving. Makes 25 - 30 punch cups
full.
The Skinny: Sometimes you can find low sugar
cranberry juice.
