1. Melocotones en Vino (Peaches Poached in
Wine)
INGREDIENTS:
2 cups dry white wine
1 cup dry sherry
1/2 cup sugar
Rind of 1 lemon
2-inch piece cinnamon stick
4 - 6 large, ripe peaches, peeled and pitted
DIRECTIONS:
Combine the wine, sherry, sugar, lemon rind, and
cinnamon stick in a saucepan and bring to a boil over
moderate heat. Place the peaches in a bowl and
pour the hot wine mixture over them. Cover and
refrigerate for 2 to 3 days.
Serve with a little of the syrup.
Serves 4 to 6.

2.Campbell's® Microwaved Enchilada Torte
Prep/Cook Time 20 min.
1 lb. ground beef
1 jar (16 oz.) Pace® Chunky Salsa
2 tbsp. chili powder
8 flour tortillas (6" to 8")
1 can Campbell's® Cheddar Cheese Soup
1 cup shredded Cheddar cheese
Sour cream (optional)
COOK beef in skillet until browned. Pour off fat.
ADD salsa and chili powder.
LAYER 4 tortillas in 2-qt. microwave-safe
shallow baking dish. Top with half of the meat mixture
and half of the soup. Repeat layers. Top with cheese.
Cover.
MICROWAVE at 70% power for 8 min. or until
hot. Serve with sour cream if desired. Serves 6.

from Great Lake Effects:
Buffalo Beyond Winter and Wings

INGREDIENTS:
1/2 cup unsalted butter
4 ounces milk chocolate
4 ounces semisweet chocolate
2 Tablespoons confectioners' sugar
3 egg yolks, beaten
2 Tablespoons Grand Marnier or other liqueur
Baking cocoa
TO PREPARE:
Combine the butter, milk chocolate and semisweet
chocolate
in a double boiler.
Cook until blended, stirring frequently. Stir in
the
confectioners' sugar. Stir a small amount
of the hot
mixture into the egg yolks; stir the egg yolks
gradually
into the hot mixture. Stir in the liqueur.
Spoon into a
nonmetal dish.
Chill covered, for 12 to 24 hours.
Shape into 1-inch balls; roll the truffles in baking
cocoa.
YIELDS: 1-1/2 dozen

Pasta, Seafood and Eggs:
Miss Maude's Spaghetti Casserole
from River Road Recipes II...
A Second Helping

INGREDIENTS:
1 large onion, chopped
1 or 2 cloves garlic, minced
1/4 cup chopped bell pepper
2 tablespoons cooking oil
2 pounds ground beef
1 (6-ounce) can tomato paste
2 cups water
1 tablespoon chili powder
Salt and pepper to taste
1 (12-ounce) package spaghetti
1 (13-ounce) can evaporated milk
3 eggs, beaten
1/4 pound American or Velveeta cheese, sliced or grated
TO PREPARE:
Brown onion, garlic and bell pepper in oil. Add
ground
beef and cook until red is gone. Add tomato paste
and
water. Add seasonings and let simmer while
preparing
spaghetti. Boil spaghetti and drain. In
separate bowl,
beat milk and eggs together with fork. Grease two
1-1/2
quart casseroles or one 3-quart casserole. Layer
spaghetti
and meat sauce until all is used. Put cheese on
top. Pour
milk mixture over all. Bake at 350 degrees for 30
minutes
or until cheese is melted and mixture is bubbly.
This
freezes well.

5. Mocha Chocolate Chip Cookies
Recipe courtesy Renee Cadran
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon fresh ground nutmeg
1 teaspoon cinnamon
1/2 pound margarine
1 cup light brown sugar
1/2 cup granulated sugar
2 tablespoons chocolate syrup
1 1/2 teaspoons vanilla
2 eggs
1 1/2 teaspoons mocha or coffee or cappuccino powder
mixed with 2 tablespoons hot water
18 ounces (1 1/2 12-ounce bags) chocolate chips
1 1/2 cups chopped walnuts
Preheat the oven to 350 degrees F.
Mix flour, salt, baking soda, nutmeg and cinnamon and
put aside.
In mixer, beat margarine, sugars, chocolate syrup, and
vanilla until smooth. Add eggs one at a time, beat until
smooth, approximately 5 minutes. Add dry ingredients,
coffee mixture, chocolate chips, and nuts and mix by
hand with wooden spoon until mixed.
Drop on baking sheet by rounded teaspoons, about
2-inches apart, and bake for 12 to14 minutes. Cool and
eat!
Yield: 3 dozen cookies

Cook Time: 14 minutes
