1. Recipe: Nanaimo Bars

Squares Baker's semi-sweet chocolate, melted &
cooled
1/2 c Butter; softened
2 tb Granulated
sugar
1 ts Vanilla
1
Egg
2 c Graham
cracker crumbs
1 c Baker's
angel flake coconut
1/2 c Chopped walnuts

1/4 c Butter; softened
3 tb Milk
2 tb Bird's custard
powder
2 c Icing
sugar

Squares Baker's semi-sweet chocolate
1 tb Butter
Base: Combine chocolate, butter, granulated sugar,
vanilla and egg; mix well. Add graham cracker
crumbs, coconut and walnuts; mix well. Press into
9" square pan. Chill.
Filling: Combine butter, milk and custard powder.
Blend in icing sugar. Spread over base; chill 15
minutes.
Glaze: Partially melt chocolate with butter over
hot water. Remove from heat; stir until entirely
melted. Spread over custard layer. Chill; store in
refrigerator.
Serving Ideas : A traditional Canadian favourite.

2. nicoise tuna salad wrap

6 eggs, hard-boiled and sliced
1 can (6 ounces) light tuna packed in water,
drained
1/4 cup reduced-fat or light salad dressing (such
as Italian or Caesar)
8 cherry tomatoes, halved
8 Niçoise olives (or other green olives), pitted
and sliced
4 whole-wheat tortillas
6 ounces (about 3 cups) mixed salad greens, finely
chopped
2 ounces baked potato chips (about 20 chips)
Gently break apart tuna in a bowl. Add salad
dressing, tomatoes and olives. Put 1/4 tuna
mixture, 1/4 greens and 1/4 of egg slices on each
tortilla. Tightly fold first third of tortilla
over mixture, fold in ends and continue to roll
over tightly. Slice in half and serve. Place
toothpick into each section or place seam-side
down to prevent unwrapping. Serve each wrap with 5
chips.
Nutritional analysis per serving: 446
calories, 17.4 g fat (3.9 g saturated), 42.4 g
carbs, 6.6 g fiber, 27.3 g protein

3. Noodle Kugel with Fruit
1 pound flat ribbon noodles, cooked
1-1/4 sticks butter or margarine (not
"spread"), melted
1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
4 eggs, beaten
1 large can fruit cocktail with juice, undrained
Grease 9" x 12" pan.
Combine all ingredients in large bowl.
Pour into pan.
Bake at 350F for 1 hour.

4. Normandy Apple and Cream Tart
(Tarte Normande à la Crème)
1 10 1/2-inch Pâte Sablée shell [recipe below],
unbaked
4 large Granny Smith apples, peeled, cored, and
cut into large (approximately 1-inch) cubes
2 tablespoons unsalted butter, melted and kept
warm
2/3 cup sugar
4 large eggs
2/3 cup crème fraîche or heavy cream
1 teaspoon vanilla extract
Preheat oven to 375 degrees F.
In a large bowl, toss the apples with the melted
butter until they are well coated, then set aside.
Combine 1/2 cup of the sugar and the eggs in the
bowl of an electric mixer. Beat the sugar
and eggs together until they are creamy and pale
yellow. Add the cream and the vanilla
extract and heat until the ingredients are well
blended. Spread the apples evenly over the
bottom of the tart shell. Pour in the cream
mixture so that the apples are evenly covered and
the cream fills the tart to just below the rim of
the shell. Sprinkle the remaining sugar over
the top of the tart. Set the tart on a
baking sheet, and bake in the center of the oven
for 35 to 45 minutes, until the batter is set, the
apples are browned, and the crust is deep golden
brown. Cool on a wire rack. Remove the
side of the pan from the tart, and serve lukewarm
or at room temperature. Serves 6 to 8

5. Nutty Vanilla Milk recipe
2 cups milk
2 tablespoons granulated sugar
1/4 teaspoon almond extract
3/4 teaspoon vanilla extract
Pour milk into microwave-safe glass bowl and heat
on HIGH (100% power) until it is hot, about 80
seconds.
Stir remaining ingredients into hot milk, and mix
until thoroughly combined. Pour into mugs and
serve immediately.
Makes 2 servings.
