1. Cajun Chicken
For a great-tasting,
low-fat chicken dish, try this easy
Cajun-style recipe.
De-boned, skinless chicken breasts
are marinated in oil, Cajun
seasoning,
Italian seasoning, and lemon pepper.
While you 're getting the grill up
to
speed, they're chilling in the
fridge.
Ingredients:
2 cups vegetable oil
2 tablespoons Cajun seasoning
2 tablespoons dried Italian-style
seasoning
2 tablespoons lemon pepper
garlic powder, to taste
10 skinless, boneless chicken breast
halves - pounded to 1/2 inch
thickness
Directions:
In a large shallow dish, mix the
oil, Cajun seasoning, Italian
seasoning, garlic
powder, and lemon pepper. Place the
chicken in the dish, and turn to
coat with
the mixture. Cover, and refrigerate
for 1/2 hour. Preheat the grill for
high
heat. Lightly oil the grill grate.
Drain chicken, and discard marinade.
Place
chicken on hot grill and cook for 6
to 8 minutes on each side, or until
juices run
clear.
Yield: 10 servings

2. Cappuccino Heaven
Ingredients:
3/4 cup powdered chocolate drink mix
1 cup instant coffee or coffee
substitute
1 cup confectioners' sugar
1/4 cup powdered vanilla
4 cups powdered milk
1/2 (7 ounce) jar nondairy
Amaretto-flavored creamer
Directions:
In a large bowl, combine chocolate
drink mix, instant coffee,
confectioners'
sugar, powdered vanilla, powdered
milk and nondairy creamer. Store in
an
airtight container. To serve, Stir 3
tablespoons mixture with 6 ounces
boiling
water.

Cauliflower Parmesan

INGREDIENTS:
1 head cauliflower
1/2 cup bread crumbs
1/2 cup grated Parmesan cheese
1 egg
1 tablespoon milk
2 tablespoons melted butter
TO PREPARE:
1. Wash and separate
cauliflower into 12 pieces.
2. Cook cauliflower for 7
minutes in salted water.
Drain.
3. Mix bread crumbs with
cheese.
4. Beat egg with milk
5. Dip cauliflower in egg
mixture, then in bread crumbs.
6. Arrange in buttered
casserole and pour melted butter
over cauliflower.
7. Cover and bake.
Temperature: 350 degrees
Time: 20 to 30 minutes
YIELD: 6 to 8 servings

4. Cheesy Apple Pie

Prep: 25 minutes
Bake: 45 minutes
Ingredients
1 cup all-purpose flour
1/3 cup butter-flavored
shortening
1/2 cup finely shredded
cheddar cheese
3 to 4 tablespoons cold water
5 cups thinly sliced, peeled
cooking apples
1 cup sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1 recipe Cheddar Crunch
Topping (see recipe below)
1/4 teaspoon salt
1/4 teaspoon salt
Directions
1. In a mixing bowl, stir together 1
cup flour and 1/4 teaspoon salt. Cut
in the shortening to the size of
small peas.
2. Stir in cheese. Sprinkle 1
tablespoon of the water over part of
the mixture; toss with a fork.
Repeat until all is moistened. Form
into a ball.
3. On a lightly floured surface,
roll out dough to form a 12-inch
circle. Ease into 9-inch pie plate.
Trim to 1/2 inch beyond edge of
plate; fold under pastry. Crimp
edge. Do not prick pastry.
4. In a bowl, combine apples, sugar,
1/4 cup flour, cinnamon, and 1/4
teaspoon salt. Transfer to crust.
5. Prepare Cheddar Crunch Topping.
Sprinkle over filling. Cover edge
with foil. Bake in a 375 degree F
oven for 25 minutes. Remove foil.
Bake for 20 to 25 minutes more or
until top is golden and fruit is
tender. Makes 8 servings.
Cheddar Crunch Topping: In a bowl,
stir together 3/4 cup sugar, 3/4 cup
all-purpose flour, and 1/4 teaspoon
salt. Cut in 1/3 cup butter until
mixture is crumbly. Gently stir in 1
cup finely shredded cheddar cheese
(4 ounces).

INGREDIENTS:
1 6-ounce
package, semi-sweet chocolate bits
3 tablespoons
butter
2 cups crisp rice
cereal
1/2 gallon
vanilla ice cream, slightly softened
Fresh or frozen
sliced strawberries
TO PREPARE:
In top of double boiler, melt
chocolate and butter over hot
water.
Blend and add rice cereal.
Press into unbuttered 9-inch
pie plate.
Chill until firm. Spoon in
vanilla ice cream until
filled. Top
with strawberries and freeze until
firm. Let stand
at room
temperature 10 to 15 minutes before
serving.
