1. Easy Cornish
Pasties
Servings: 4
Preparation Time: 15 min.
Cooking Time: 80 min.
Ingredients:
2 large potato, peeled and diced
1 large onion\cooked, finely
chopped
1 medium turnip\cooked, peeled
and diced
2 ready-made pie crust, at room
temperature
1/2 Lbs. top round steak,
chopped
Cooking Directions:
Preheat oven to 425° F. Mix
chopped vegetables together and
sprinkle with salt and pepper to
taste. Fold each pastry out into
2 large circles. Place half the
vegetables on one half of each
circle and put meat on top.
Dampen edges of pastry and fold
over, pressing edges together
well. Put pastries on a baking
sheet and bake 20
minutes, then reduce oven
temperature to 350° F and bake
1 hour.

2.Eggplant Casserole
Servings: 4
Preparation Time: 10 min.
Cooking Time: 25 min.
Ingredients:
4 tsp. vegetable oil
1-1/2 tsp. cumin seed
1-1/2 tsp. fennel seed
1/2 tsp. whole black peppercorn,
cracked
2 small onion\cooked, sliced
6 clove garlic, thickly sliced
2 tsp. dry mustard
1 tsp. crushed red pepper
1 tsp. turmeric, or curry powder
3/4 Lbs. eggplant, cut into 2 x
.5 inch pieces
3/4 Lbs. Italian-style stewed
tomato, coarsely chopped
1 Lbs. canned white kidney
beans, rinsed and drained

Cooking Directions:
Heat oil in a heavy nonstick
skillet or flameproof casserole
over medium high heat. Cook
cumin seed 15 seconds or until
dark brown. Stir in fennel and
pepper. Immediately add onions
and garlic and sauté 5 minutes,
stirring frequently, until
golden. Stir in next 3
ingredients. Add eggplant and
reduce heat to medium. Sauté 5
minutes, stirring occasionally,
until eggplant softens. Stir in
tomatoes and simmer 10 minutes,
stirring frequently. Stir in
beans. Reduce heat to low and
simmer 5 minutes or until sauce
thickens. Sprinkle with
cilantro.

3. Recipe: Elfin Chocolate
Chip Cheesecake

Graham cracker ready crust
8
oz Cream cheese; softened
1/3 c
Sugar

pt Sour cream
2
ts Vanilla
8
oz Cool Whip
1
c Mini chocolate chips
Beat cream cheese until smooth;
gradually add sugar. Blend in
sour cream and vanilla. Fold in
Cool Whip, blending well. Stir
in mini chocolate chips. Spoon
into crust. Chill until set, at
least 4 hours. Garnish as
desired.

4. Recipe: Emeril's Tuna
Burger
Categories: Main dish, Emeril,
Seafood, Barbeque
Yield: 2 Servings
3/4 lb Finely chopped tuna
steaks
2 tb Dijon mustard
1/2 ts Freshly grated ginger
1 ts Chopped green onion
1 tb Soy sauce
Freshly grated pepper
1 tb Olive oil
2 Egg bread
rolls
Sesame oil
1 ts Honey
8 Thin slices
of cucumber
2 tb Radish or bean sprouts
Combine tuna, 1 tablespoon
mustard, ginger, onions, soy,
and pepper to taste. Form into 2
3/4 inch thick patties. Heat oil
in skillet until hot, carefully
add tuna patties and sear for 4
mins. Meanwhile, split rolls in
half and drizzle with sesame
oil. Whisk together remaining
mustard and honey. Flip patties
and continue cooking for 5 mins.
Place rolls in skillet and
toast. During the last minute of
cooking baste patties with honey
mustard mixture. Assemble
patties, top each with cucumber
and sprouts. Serve with top of
roll askew to see presentation.

5. Recipe: Espresso
Brule
Categories: Aldo & frie, New
Yield: 4 servings
500 ml Double
cream; (17fl oz)

tb Extra strong black coffee
6
Egg yolks
2
dr Vanilla essence; (2 to 3)
3
tb Caster sugar
Demerera sugar for sprinkling
Pre-heat the oven to 160øC/325øF/gas
mark 3.
Place the cream and coffee in a
large bowl and beat in the egg
yolks, vanilla essence and
caster sugar. Pour into 4 x 10cm
(4 inch) ramekin dishes. Place
the ramekins in a roasting tin
lined with newspaper. Pour
enough hot water into the tin to
come halfway up the sides of the
ramekin dishes. Cook in the oven
for one hour until just set.
Allow to cool, then chill for at
least 4 hours.
Pre-heat the grill to hot.
Sprinkle an even layer of
demerera sugar about 2mm (1/8
inch) thick over the custards.
Place under the grill for 3-5
minutes until the sugar melts
and caramelises. Leave to cool a
little so the caramel sets
before serving.
