1. Recipe: Jack Hunter Peanut Butter Pie

Categories: None

Yield: 1 Servings      

      1 c  Low fat Peanutbutter
      8 oz Lowfat cream cheese
    3/4 c  Powdered sugar
     12 oz Lowfat coolwhip
      1    8" Grahm Cracker crust


Beat the cream cheese until fluffy and add the remaining ingredients.Combine mixture well and pour into 8" gramh cracker crust. Chill for at least 2 hours and serve (it is so good)

2. Recipe: Jack-O'-Lantern Cookies

Yield: 1 Servings

    1/2 cn Pillsbury Cream Cheese Frosting
      2 oz Vanilla Flavored Candy Coating
           Orange Food Coloring
     14    Creme-Filled Chocolate Sandwich Cookies
      7 sm Green Gumdrops; Cut In Half
      1    Tube Decorator Icing - Chocolate

In small saucepan, combine frosting and candy coating; melt over low heat, stirring occasionally until smooth. Remove from heat. Stir in desired amount of food color.
Line cookie sheets with waxed paper. Using tongs, dip each cookie in melted frosting mixture, coating completely. Lay flat on cookie sheets. Let stand 10 minutes until set.
Decorate coated cookies with jack-o'-lantern faces using decorator icing. Top each with 1 gumdrop half for stem.

14 cookies

NOTES : For Halloween, creme filled chocolate sandwich cookies are available with orange filling; these special festive cookies are perfect for this recipe. Recipe by: Pillsbury Classic Cookies and Bars

3. Jeweled Oat Muffins Recipe

Breakfast to be excited about

From, "Above & Beyond Parsley... Food for the Senses,"

INGREDIENTS:


1 cup old-fashioned oats

1 cup buttermilk

1 large egg, beaten

1/2 cup (1 stick) butter, melted

1 cup flour

1/2 teaspoon cinnamon

1/2 cup firmly packed brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

6 teaspoons plum jam

6 teaspoons apricot jam TO PREPARE:

In a medium bowl, combine oats and buttermilk and let stand for 2 minutes.  Stir in egg and melted butter.  In a small bowl, combine flour, cinnamon, brown sugar, baking powder, baking soda and salt.  Add to oat mixture and stir until just combined.

Preheat oven to 350 degrees.  Pour batter into greased muffin tins and top each with 1 teaspoon jam (alternate between plum and apricot).  Bake until a toothpick inserted into the centers comes out clean, about 18 minutes.  Cool slightly and serve.

NOTE:  Any fruit jam works well on top of these muffins.  Children especially love them baked as mini muffins, served with cold milk or hot cocoa.

YIELDS: 12 muffins

4. Jiao Z Recipe

Bite into a mouth-watering recipe

From, "Above & Beyond Parsley... Food for the Senses,"

INGREDIENTS:


1/2 pound ground pork

8 ounces cooked spinach

5 scallions, chopped

2-3 tablespoons soy sauce

2 tablespoons sesame oil

2-3 tablespoons freshly chopped garlic

1-1/2 tablespoons grated fresh ginger

1-1/2 teaspoons salt

1 egg white

1 package won ton skins (4- by 4-inch squares) TO PREPARE:

Combine all ingredients except egg white and spoon into won ton skins (about 1 teaspoon per wrapper).  Fold on line to form triangles.  Seal corners and edges with egg white.  Bring outside corners up to meet and seal again with egg white.

Boil for about 5 to 10 minutes.  Dumplings will float, then sink and then usually float again.  Do not undercook, as pork will not be done; do not overcook or dumplings will be too soft.

As an alternative, heat wok with oil.  Add dumplings and fry until golden.

These authentic Chinese morsels (pronounced ""jouzit"") are also known as potstickers.  Have flavored soy sauces, sweet and sour sauce and hot mustard available for dripping.  The boiled variety are also great in soup.

5. Recipe: Jim's Special Coffee

Yield: 8 Cups

-----------------IN THE FILTER----------------------
    
 
      4 tb Coffee, heaping
      2 tb Cocoa
      1    Stick cinnamon, broken into 1" pieces
      4    Nails of cloves
      1    Grating of nutmeg
      1    Lemon and orange peel
      2 tb Dark brown Demerera sugar


------------------IN THE POT-----------------------
      
      1 ts Vanilla extract
      4 oz Dark rum or brandy


Add the first set of ingredients into the coffee filter and brew 8 cups of coffee. Once it's made add vanilla and the liquor before serving. This coffee is best served black, without cream or milk. Ingredients and proportions can be changed to suit individual taste.
