tortilla chips
Cheddar cheese
Jalapeno pepper; thinly sliced
Bean dip
Taco sauce
Chopped green onion
Guacamole dip
Spread tortilla chips on a 10 to 12 inch dinner
plate.
Spread a layer of bean dip - and a dab of taco
sauce.
Top with a small square of mild Cheddar cheese
and a slice of pepper.
Microwave at medium (50%) until cheese softens,
2 to 3 minutes.
Spread tortilla chips on a 10 to 12 inch dinner
plate.
Spread a layer of guacamole and top with chopped
green onions and strips of mild Cheddar cheese.
Microwave at medium (50%) until cheese softens,
2 to 3 minutes. Still other tortilla chips can
be covered with a small slice of cheese and
topped with a slice of jalapeno pepper and
microwaved.

2. Natalie's Easy Best Bottom Roast

Ingredients:
1 boneless beef roast, about 6 lb each
2 can cream of mushroom soup
2 package dry onion soup mix
oven roasting bag
This Recipe is considered:

Cooking Directions:
Preheat oven to 375° F. Place roast inside
roasting bag. Pour mushroom soup over meat.
Sprinkle onion soup mix over mushroom soup.
Close bag according to package directions. Roast
2-3 hours (2 for rare, 21/2 for medium, and 3
for well done meat). Serve roast with delicious
gravy in the bottom of the bag.

1 Lbs. smallnew potatoes, scrubbed
1 Tbs. unsalted butter
1/2 cup dry white wine or chicken stock
1/8 tsp. salt (optional)
2 Tbs. parsley, chopped
1/2 tsp. dried dill, or 1-1/2 Tbs. fresh dill,
chopped

Cooking Directions:
Place potatoes in a steamer basket over boiling
water. Cover saucepan and steam 8-10
minutes or until tender. Remove from steamer
basket. Melt half the butter in a heavy nonstick
skillet over medium heat. Saute potatoes 4-5
minutes or until just crispy. Add wine and
remaining butter. Simmer over medium high heat 5
minutes or until liquid has thickened. Season
with salt and pepper to taste. Sprinkle with
parsley and dill and toss.

5. Not-So-Sinful Brownies

Ingredients:
1/4 cup vegetable oil
3 oz. unsweetened chocolate
1-1/4 cups granulated sugar
1/2 cup applesauce
4 egg white\cooked, lightly beaten or 2 whole
eggs, lightly beaten
1 tsp. vanilla extract
1 cup quick or old fashioned oatmeal, uncooked
1 cup all purpose flour
1 tsp. baking powder
1/4 tsp. salt (necessary)
2 Tbs. powdered sugar (optional)

Cooking Directions:
Preheat oven to 350° F. Lightly spray bottom
only of a 13 x 9 inch baking pan with nonstick
cooking spray. Combine oil and chocolate in a
saucepan over low heat. Simmer until chocolate
is melted, stirring frequently. Remove from heat
and cool slightly. Add sugar and applesauce and
mix well. Stir in egg whites or eggs and vanilla
and mix well. Combine oatmeal and next 3
ingredients in a bowl. Add to applesauce mixture
and mix well. Spread evenly in prepared pan. Bake
22-25 minutes or until center is almost set and
edges pull away from sides of pan. Do not
overbake. Cool completely. Sprinkle with
powdered sugar just before serving, if desired.
Cut into bars. Store loosely covered.
