1. Title: Vanilla Bean Pudding
Yield: 1 Servings

Ingredients:
3/4 c Sugar
3 tb
Cornstarch
3 c
Half-and-half
4
Egg yolks
1 tb Unsalted
butter
1
Vanilla bean split
1 c --
crushed vanilla wafers
2 c
Raspberries

Mint sprigs,; for garnis
In a saucepan combine sugar and
cornstarch. Stir in half-and-half. Cook,
stirring, over medium heat until
mixture thickens. In a small bowl beat egg
yolks. Gradually add half of cream
mixture to yolks, stirring constantly.
Return egg mixture to saucepan and
heat just to simmering. Reduce heat and
simmer 2 minutes more, stirring all
the while. Remove from heat and stir in
butter. Pour custard into 4 small
ramekins, about 1/2 cup capacity. Top
each with vanilla wafers and
raspberries. Cover with plastic wrap and
refrigerate until ready to serve.
Garnish with mint leaves.
Yield: 4 serving

2. Title: Vanilla Brownies
Yield: 6 Servings
Categories: Desserts,

Ingredients:
2 1/4 c Unsifted flour
2 1/2 ts Baking powder
1/2 ts Salt
3/4 c Butter -
softened
1 1/4 c Sugar
1 1/4 c Brown sugar (packed)
1 ts Vanilla
3
Eggs
12 oz Chocolate
chips if desired
Preheat oven to 350. In small
bowl combine flour, baking powder and salt.
Set aside. In large bowl beat
butter, sugar, brown sugar and vanilla until
creamy.
Add eggs, one at a time.
Gradually beat in flour mixture.
Add chips (if desired)
Spread evenly into well greased 15 x
10 x 1 baking pan (approximate size of
pan)
Bake 350 35 - 40 min. Cool in
pan on rack. When completely
cool cut into
pieces.

3. Vegan Pate
Servings: 16
Preparation Time: 15 min.
Cooking Time: 75 min.
Ingredients:
1 Lbs. garbanzo beans, drained, rinsed and
mashed
1/2 cup whole wheat flour
1/2 cup nutritional yeast
2 Tbs. lemon juice
1 potato, raw, grated
4 green onion, thinly sliced
1 stalk celery, grated
1 carrot\raw, grated
1-1/2 cups warm water
1 tsp. thyme, or more to taste
1 tsp. basil, or more to taste
1 tsp. ground sage, or more to taste

Cooking Directions:
Preheat oven to 350° F. Mix all ingredients
together. Pour into a 9 x 9 inch pan. It
might look a little soupy, but that's all
right. Bake 1 hour plus 15-20 minutes
until golden brown. The top will be firm,
but inside will still be liquid. This is
fine, as it cools to a pate-like
consistency. Refrigerate and serve
cold. Use on crackers, or as a spread for
sandwiches.

5. Vegetable-Rice Pilaf
Servings: 4
Preparation Time: 10 min.
Cooking Time: 25 min.
Ingredients:
3/4 cup long-grain rice
1-1/2 cups vegetable stock
1/4 tsp. dried basil, crushed
3/4 cup frozen mixed vegetables
1/4 cup green or red bell pepper\cooked,
seeded and chopped
This Recipe is considered:

Cooking Directions:
Heat a heavy nonstick skillet sprayed with
nonstick cooking spray over medium heat 1
minute. Add rice and cook 3-4 minutes,
stirring constantly until browned. Stir in
stock and basil. Bring to a boil. Reduce
heat to low, cover tightly and simmer
10 minutes. Stir in vegetables and pepper.
Cover and simmer 10 minutes more, or
until rice is done and most of liquid is
absorbed.
