1. Falafel Croquettes
Servings: 4
Preparation Time: 10 min.
Cooking Time: 15 min.
Ingredients:
1 Lbs. canned chickpeas, drained
3 clove garlic, crushed
2 tsp. ground coriander
2 tsp. ground cumin
2 Tbs. fresh chives, snipped
salt and pepper
2 Tbs. oil
2 Tbs. oil
This Recipe is considered:

Cooking Directions:
Place chickpeas, garlic, coriander, cumin, chives, and salt
and pepper to taste in a blender or food processor with

necessary. Divide and roll the chick pea mixture into small
balls (croquettes). Fry the croquettes in hot oil, in
batches, for about 2-3 minutes each, or until golden. Drain
on paper towel. Serve hot.

3. Famous White Bean Soup Recipe
A filling soup that's as good as it sounds
From the, "Houston
Junior League Cookbook," published in cooperation
with your Daily InBox newsletter.
INGREDIENTS:
1 pound (2 cups) small, white dried beans
3 quarts cold water
3 medium potatoes, peeled, boiled and mashed
6 ribs celery, finely cut
1/4 cup chopped parsley
2 onions, minced
2 cloves garlic, crushed
2 pounds ham hock
Salt and pepper TO PREPARE:
Soak beans in water overnight; drain. Place beans in
large soup kettle, cover with fresh water, and cook for
about 1 hour or until beans are tender. Drain.
Add the 3 quarts water, mashed potatoes, celery, parsley,
onions, garlic and ham hock. Cook slowly for 2 hours,
stirring occasionally. Remove ham hock. Pull
meat from bones and cut into small pieces. Return meat
to soup. Season to taste with salt and pepper.
Freezes well.
YIELD: 3 or more quarts

4. Title: Flaky Pie Crust
Yield: 1 Crust

Ingredients:
1 c All purpose flour
1/3 c Cake flour
1/2 ts Salt
1 tb Sugar
6 tb Cold unsalted butter cut
into pieces
2 tb Cold vegetable
shortening
3 tb Or up to 4 tb cold water
or cold whole milk*
Note: Water produces a crisper pie crust than
milk. Using milk will make a
more tender crust.
On a warm or humid day, this dough may require less
liquid than on a cool
dry day. Double the ingredients for a double
crust.
Mix flour, cake flour, salt and sugar in a food
processor. Add the cold
butter and shortening and process with about six
pulses, until the mixture
forms pea size lumps. With the machine still
running, add three
tablespoons of water or milk and process until large
moist chumps form and
the dough holds together.
If the dough is too dry, add more water or milk by
teaspoonful.
Gather the dough into a ball. Flatten it into a
disk. Wrap in plastic
wrap and refrigerate for one hour before rolling it
out.

5. Fresh Green Beans Italiano Recipe
Healthy

INGREDIENTS:
1 pound fresh green beans, cleaned with ends snapped off
(see note)
2 tablespoons olive oil
2 garlic cloves, minced
Salt and pepper TO PREPARE:
In a medium saucepan over high heat, bring salted water to a
boil. Add green beans. Blanch until beans are
bright green, approximately 5 minutes.
In a serving bowl, combine olive oil and garlic. Set
aside.
When beans are done, remove from heat and rinse with cold
water to stop beans from cooking any further. Drain.
Pour into serving bowl and toss thoroughly with olive oil
and garlic. Season with salt and pepper. Set
aside to allow flavors to blend and serve at room
temperature.
NOTE: Adding salt to boiling water keeps beans a
bright green color.
SERVES: 4
