1. Make Believe Champagne
Ingredients
1 1-liter bottle carbonated water,
chilled
1 1-liter bottle ginger ale, chilled
1 24-ounce bottle unsweetened white
grape juice, chilled
Ice cubes
Directions
In a
large pitcher combine the carbonated water,
ginger ale, and white grape juice. Pour over
ice cubes in chilled champagne glasses or
wine glasses.
Makes about 20 servings.

2. Minestrone
This hearty Italian-style soup is
perfect on a chilly
winter's evening.
Serves 6-8
2 Tablespoons Olive oil
1 medium Onion, diced
2 stalk Celery, diced
2 Carrots, peeled and diced
1 teaspoon Garlic, minced
1 Tablespoon Basil
1/4 teaspoon Rosemary
2 cups Cabbage, chopped
2 cups Tomatoes, diced
4 cups Water
4 cups Chicken broth
1 1/2 cups Pinto beans, cooked (canned)
Salt and pepper to taste
Heat the oil in a soup pot. Add the onion,
celery, carrots
and garlic. Cook until soft. Add the herbs,
cabbage,
tomatoes, water and broth. Slowly bring to a
boil. Reduce
the heat and simmer for 45 minutes. Add the
beans and
simmer for 10 minutes longer. Check the
seasonings.

3. MOCK LOBSTER
Ingredients:
1/4 cup butter, melted
3/4 tsp paprika
1/2 tsp salt
1/4 tsp ground black pepper
4 6-oz filets monkfish
4 tbsp bread crumbs
Directions:
Preheat oven to 350 F.
In a small bowl, combine the melted butter,
paprika, salt and pepper. Place the fish
fillets on a non-stick or parchment
lined baking sheet.
Brush the fillets evenly with the butter
mixture and sprinkle the bread crumbs over
the tops of each fillet.
Bake in the oven for 15 - 20 minutes or
until the fish flakes easily with a fork.

4. Monkey Bread
4 can refridgerated biscuits
*not jumbos, just regular and the cheapo
brands work just fine*
1 cup Sugar
2-4 Teaspoons of Cinnamon
*depending on your taste for cinnamon*
1 cup Brown Sugar
1 stick of Margerine
Mix sugar and cinnamon in a plastic ziplock
baggy.
Cut each biscuit into 4 pieces, slightly
roll into ball shape.
drop a few pieces of dough, at a time, into
the sugar/cinnamom mix
and shake till coated. Drop the pieces into
a well greased tube/bundt pan.
When you have about half the biscuits in the
pan,
boil the Brown Sugar and Margerine for about
one minute, making a syrup. Drizzle half the
syrup over the bisquits in the pan. Finish
filling the pan and drizzle remaining syrup
over biscuits
Bake at 350 for about 35 minutes. Let cool
for 10 minutes.
Turn pan over onto a plate. Let it set with
pan over bread while
the syrup drizzles back over the biscuits.
Do not slice it... break chunks off and eat!

My Private Tiramisu
from Great Lake Effects:
Buffalo Beyond Winter and Wings

INGREDIENTS:
1 cup cold espresso
2 Tablespoons dark rum
1 Tablespoon sugar
1 Tablespoon creme de cacao
1 pound mascarpone cheese
1/4 cup dark rum
2 Tablespoons vanilla extract
1 Tablespoon lemon juice
1 cup whipping cream
1 Tablespoons confectioners' sugar
4 egg yolks
1/2 cup sugar
4 egg whites, stiffly beaten
24 ladyfingers
6 ounces bittersweet chocolate, grated
Chocolate-covered espresso beans
TO PREPARE:
Combine the espresso, 2 Tablespoons dark
rum, 1 Tablespoon
sugar and creme de cacao in a bowl
and mix well.
Combine the mascarpone cheese, 1/4 cup dark
rum, vanilla
and lemon juice in a bowl and mix
well.
Beat the whipping cream with the
confectioners' sugar in a
mixer bowl. Fold into the
mascarpone cheese mixture.
Beat the egg yolks and 1/2 cup sugar in a
mixer bowl until
thickened. Stir into the
mascarpone cheese mixture.
Fold in the egg whites.
Dip the ladyfingers into the espresso
mixture. Layer the
ladyfingers, cheese mixture and
grated chocolate 1/3 at a
time in a trifle bowl. Sprinkle
with espresso beans.
Chill until set.
SERVINGS: 10 - 12
