1. Nacho Casserole

Yield: 4 Servings
1 lb Lean
ground beef
1 lg Onion;,
chopped
1
16 oz can refried beans
1 cn (4 oz)
chopped green chiles,, drained
1 c
Shredded cheddar cheese
1 1/2 c Shredded Monterey jack
cheese
1 c
Taco sauce
1/4 c Chopped green
onions; including tops
1 cn (4 oz)
chopped ripe olives; drained
1
Ripe avocado;, mashed
1 c
Sour cream
Tortilla chips
Brown beef and crumble in a large skillet.
Add onions and cook until translucent.
Season to taste with salt and pepper. Spread
refried beans in the bottom of an 11/13 inch
baking dish; top with meat mixture. Sprinkle
chiles, then cheeses, then taco sauce over
all. Bake at 400°F for 20 minutes. Remove
from oven and sprinkle green onions and
olives over all. Mound mashed avocado in the
center; top with sour cream. Serve with
chips.
NOTES : This recipe appeared in the San Jose
Mercury during the mid 1960's. It was an
immediate hit with my two sons and we often
had it for dinner.

2. Nantucket Cranberry Pie

Yield: 8 Servings
2 c Cranberries; chopped
1/2 c Walnuts; chopped
2 Egg
3/4 c Butter or margarine; melted
1 1/2 c Sugar
1 c Flour
1 ts Almond extract
Chop enough cranberries to make 2 cups. Chop
enough walnuts to make 1/2 cup.
In the bottom of a 10-inch pie plate or
springform pan, place the chopped
cranberries, chopped walnuts, and 1/2 cup
sugar..
Mix 2 eggs, 3/4 cup melted butter, 1 cup
sugar, 1 cup flour, and 1 teaspoon almond
extract. Stir until smooth.
Pour over the cranberry walnut mixture and
bake for 40 minutes at 350.

3. Navy Bean Soup
Servings: 8
Preparation Time: 10 min.
Cooking Time: 180 min.
Ingredients:
1 Lbs. dried Great Northern or navy beans,
soaked overnight in water to cover and
picked over
1 meaty ham bone
4 cup water, to cook
2 onion\cooked, finely chopped
3 clove garlic, minced
3 stalk celery, finely chopped
1/4 cup parsley, finely chopped
This Recipe is considered:
Low Fat
Low Cholesterol
Low Sodium
Cooking Directions:
Drain beans and combine with ham bone and
water in a large soup kettle over high heat.
Bring to a boil, reduce heat to low and simmer
2 hours. Stir in remaining ingredients,
except parsley. Season with salt and pepper
to taste. Simmer about 1 hour until
beans are tender. Remove ham bone from soup
and discard. Serve sprinkled with parsley.

Cooking Time: 0 min.
Ingredients:
3/4 cup apple juice, or white grape juice
1 cup red raspberries, pureed
5 ripe nectarine, pureed
This Recipe is considered:

Low Calorie
Low Cholesterol
Low Sodium
Cooking Directions:
In large bowl, combine all ingredients. Freeze
in freezer container or in ice cream maker
according to manufacturer's directions.
Thirty minutes before serving, process in
food processor and refreeze until serving.

5. New England Cod
Servings: 4
Preparation Time: 10 min.
Cooking Time: 20 min.
Ingredients:
1 Lbs. cod fillets
2 tsp. oregano, or 2 Tbs. fresh, chopped
1/8 tsp. salt (optional)
4 tsp. olive oil
1 Lbs. zucchini\cooked, sliced
1 largered onion\cooked, thinly sliced
1 clove garlic, minced
3 tomato\cooked, cut into wedges
3/4 tsp. basil, or 1 Tbs. fresh, chopped
2 Tbs. lemon juice
This Recipe is considered:
Low Sodium
Cooking Directions:
Season cod fillets with oregano, salt and
pepper to taste. Heat oil in a heavy
nonstick skillet over medium heat. Saute
fillets 4-5 minutes per side, or until fish
flakes easily. Transfer to a platter and
keep warm. Reduce heat to medium and saute
zucchini, onion, and garlic 3-4 minutes, or
until onion is softened. Add remaining
ingredients and saute 2-3 minutes longer, or
until tomatoes are softened. Serve
vegetables with cod.
