1. Recipe: Quaker's Chewy Choc-Oat-Chip(Tm) Cookies
Categories: Choco4
Yield: 1 servings
1 c Margarine/butter; softened
1 1/4 c Firmly packed brown sugar
1/2 c Granulated sugar
2 Eggs
2 tb Milk
2 ts Vanilla
1 3/4 c All-purpose flour
1 ts Baking soda
1/2 ts Salt; (optional)
2 1/2 c QUAKER Oats uncooked; (quick or old fashion)
12 oz Semi-sweet chocolate pieces
1 c Chopped nuts; (optional)
Heat oven to 375 F. Beat together margarine and sugars until
creamy. Add eggs, milk and vanilla; beat well. Add combined
flour, baking soda and salt; mix well. Stir in oats, chocolate
pieces and nuts; mix well. Drop by rounded tablespoonfuls onto
ungreased cookie sheet. Bake 9 to 10 minutes for a chewy cookie
or 12 to 12 minutes for a crisp cookie. Cool 1 minute on cookie
sheet; remove to wire rack. Cool completely.
Easy Bar Cookies: Press dough onto bottom of ungreased 13x9-inch
baking pan. Bake 30 to 35 minutes or until light golden brown.
Cool completely; cut into bars. Store tightly covered. 32 BARS
High Altitude Adjustment: Increase flour to 2 cups.

2. Recipe: Quarterback Meatloaf
Categories: Meats, Easy
Yield: 4 Servings
1 Egg or egg
substitute
1 lb Lean ground beef or 1/2 lb.
each ground beef and pork
1 ts Salt
1 ts Granulated sugar
1/8 ts Pepper
1 ts Lemon juice
1/4 c Chopped onion
1/2 c Bread crumbs
1/2 c Pork and beans
12 Strips pimiento
1/4 c Ketchup
Set oven at 400. Beat egg in mixing bowl. Add all ingredients
except pimiento and ketchup. Mix lightly with fork. Shape into
four loaves shaped like footballs. Place loaves on baking sheet
and brush with catsup mixed with 1 tbs. water. Bake 25 minutes.
Left with large spoon onto serving dish. Put strips of pimiento
on top each loaf in X design. Serves 4 Typed in MMFormat by cjhartlin@msn.com

3. Recipe: Queen Scallops in a Mustard And White Wine Sauce

Yield: 2 servings
Filo pastry pan x 2
225 g Queen scallops
4 tb White wine
1 ts Dijon mustard
1/2 ts Fennel
Salt and pepper
Lemon juice
1 Shallot;
finely chopped
1/2 ts Chopped parsley
75 ml Double cream
60 g Butter
Butter for greasing
1 tb Brandy
Heat a small non stick pan and melt the butter. Add the shallot
and sweat off without colouring. Add the scallops, setting flame
in brandy with lemon juice.
Add white wine and mustard. Add cream and fennel. Reduce.
Scatter with parsley. Scoop into filo pastry pan and serve
immediately.

4. Quick and Easy Baked Apple Pancake
Prep Time: 5 min Cook Time: 15 min Makes: 4 servings
Ingredients
Crisco® Original No-Stick Cooking Spray
1/2 cup Hungry Jack® Extra Light & Fluffy Complete Pancake
& Waffle Mix (Just Add Water)
3/4 cup milk
3 large eggs
2 tablespoons Crisco® Pure Vegetable Oil
1/4 teaspoon ground cinnamon
1 (20.5 oz.) can apple pie filling
Powdered sugar
Preparation Directions
1.
HEAT oven to 450°F. Spray a 9 or 10-inch cast iron skillet with
no-stick cooking spray. Place over medium-high heat.
2.
WHISK pancake mix, milk, eggs, oil and cinnamon in medium bowl
until well combined. Pour into hot skillet and immediately put
skillet in oven.
3.
Bake 10 minutes. Reduce heat to 350°F. Bake 5 minutes more or
until golden brown and puffy. Slide pancake onto a platter and
top with apple pie filling. Sprinkle with powdered sugar. Slice
into wedges and serve.

5. Quick Vegetable Medley
Servings: 6
Preparation Time: 5 min.
Cooking Time: 10 min.
Ingredients:
3 cup frozen mixed vegetables, thawed, include broccoli,
cauliflower and carrots
1 cup white wine
1 Tbs. fresh dill, minced
1 tsp. garlic, minced
1 Tbs. fresh lemon juice
salt and pepper, to taste
This Recipe is considered:

Low Cholesterol
Low Sodium
Cooking Directions:
Combine all ingredients in a saucepan and cook over medium high
heat for 5-6 minutes. Remove the vegetables with a slotted spoon
and keep warm. Bring the liquid remaining in the pot to a boil.
Lower the heat and reduce by 1/3 . Pour over the cooked
vegetables and serve.
