1. Baked Potato Soup
Cubes of cooked potato are added with sour cream to a
pot of roux-thickened
milk in this soup which is garnished with cheddar cheese and
chives.
Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 5 servings
Ingredients:
1/3 cup butter
1/3 cup all-purpose flour
4 cups skim milk
6 large baking potatoes, scrubbed
1 cup sour cream
Directions:
Microwave potatoes until done. While potatoes are cooking make a
roux over
low to medium heat. Mix butter, margarine, or light olive oil,
and flour. DO NOT
BURN THE ROUX. When roux is thickened a bit, gradually blend in
milk.
Continue cooking over low to medium heat while preparing
potatoes. Peel and
cut up potatoes. You may want to mash some of the potatoes also.
Add
potatoes to the milk mixture. Blend in sour cream. Soup is ready
to be served.

2. Basil Chicken & Vegetables
Prep/Cook Time: 20 min.
1 tbsp. vegetable oil
4 boneless chicken breast halves
1 can Campbell's Cream of Broccoli or 98% Fat Free Cream of
Broccoli Soup
1/2 cup milk
1/4 tsp. dried basil leaves, crushed
1/8 tsp. pepper
1 bag (16 oz.) frozen vegetable combination (broccoli,
cauliflower, carrots)
HEAT oil in skillet. Add chicken and cook until browned.
ADD soup, milk, basil, pepper and vegetables. Heat to a boil.
Cover and cook over low heat 5 min. or until done. Serves

3. Bermuda Triangle
1 shot each of:
Dark Rum
Light Rum
Bacardi 150
Grenadine
Orange Juice
Crushed Ice
Mix the shots with the crushed ice in a shaker. to serve:
pour into a
10 oz glass and fill to rim with orange juice.
CAUTION:: The restaurant limits everyone to 2 of these as they
are
very potent please be wise and do not drink to many of these!!!

4. BLACKBERRY COBBLER
2 c. frozen or canned blackberries
2 c. sugar
1 c. flour
1 c. milk
1 can biscuits
Bring blackberries, sugar and 3 cups of water to a boil.
Pour into
baking dish or pan. Mix together flour and milk and pour
into
blackberries. Place canned biscuits on top and sprinkle
with sugar
and dot with butter. Bake at 400 degrees until biscuits
are golden
brown.

5. Boston Market Macaroni & Cheese

"I am a huge fan of Boston Markets macaroni and cheese.
It's just
so cheesy and I love spiral pasta! I'll admit, I sometimes buy
the
frozen Boston Market meals but they are so expensive. I found it
is
so much cheaper to prepare this macaroni and cheese recipe at
home."
INGREDIENTS
3 cup dry spiral shaped pasta - cooked al dente, drained
2/3 cup Milk
1 lb Velveeta cheese - cubed small
1/4 teaspoon dry mustard powder
1/2 teaspoon ground turmeric
Salt and pepper to taste
INSTRUCTIONS
In a double boiler over gently simmering water, add milk,
cheese,
mustard powder, turmeric, salt and pepper in that order. Stir
with
whisk until melted and smooth. Mix pasta into hot cheese mixture
until combined.
