1. Karin's Bavarian Apple Torte

Ingredients:
1/2 cup butter, softened
1/3 cup sugar
1/4 tsp. vanilla extract
1 cup all purpose flour, sifted
1/2 Lbs. cream cheese
1 egg, slightly beaten
1/2 tsp. ground cinnamon
1/3 cup sugar
1/4 cup almonds, blanched and sliced
4 cup fresh apples, thinly sliced

Cooking Directions:
Preheat oven to ° F450. Beat butter, 1/3 cup cup sugar, and
vanilla extract in a medium-sized bowl with an electric mixer
until well-blended. Slowly stir in flour until the dough
mixture forms soft dough. Press dough into bottom and about
1-1/2 inches up the side of an ungreased 9-0/1 inches
springform pan. Beat cream cheese and 1/4 cup sugar in a
medium-sized bowl with an electric mixer. Add egg and vanilla,
beating just until smooth. Pour mixture into springform pan.
Combine apples, cinnamon, and remaining sugar in a large bowl.
Layer evenly over cream cheese mixture. Sprinkle almonds over
top. Bake at ° F450 for 10 minutes. Lower heat to °F400 and
bake 25 minutes longer. Cool in pan on wire rack before
removing side of pan. Serve at room temperature or chilled.

Ingredients:
1/4 cup unsalted butter
1 cup onion\cooked, finely minced
1 cup celery\cooked, finely minced
1 Lbs. dried white beans, soaked overnight in water to cover
4 cup water
4 beef stock cube
2 clove garlic, finely minced
1/3 cup dark molasses
1/4 cup dark brown sugar
1/3 cup cider vinegar
1-1/2 Lbs. canned apple pie filling

Cooking Directions:
Melt butter in a large heavy pot over medium heat. Saute
onion, celery and garlic 7-8 minutes until onions are golden.
Add beans together with their water. Add water, bouillon and
salt to taste. Increase heat to medium high and bring to a
boil. Reduce heat to low and gently simmer 1 hour, stirring
occasionally. Stir in remaining ingredients, except apple
filling. Simmer uncovered, over low heat about 1 1/2 hours,
stirring occasionally until liquid has thickened. Chop apple
filling until pieces are about the size of beans. Stir into
pot and heat 10 minutes until hot. Season with salt and pepper
to taste.

3 Tbs. sugar
2 Tbs. fresh mint leaves, chopped
1 Tbs. lemon juice
1/4 cup water
1/4 cup bourbon
4 large ripepeach, peeled and sliced
8 fresh mint sprig

Cooking Directions:
Combine first 4 ingredients in a heavy saucepan over high
heat. Bring to a boil and cook 1 minute, stirring to dissolve
sugar. Transfer to a bowl and stir in bourbon. Refrigerate or
freeze at least 10 minutes until cool. Strain to remove mint.
Divide peaches among individual dessert dishes and toss gently
with syrup. Garnish with mint sprigs before serving.
